Richmond’s vegan restaurant week — V72x2 — is fully underway and runs through Sunday, Jan. 26. Participating restaurants have been challenged to add new innovative dishes to their menu specifically for this week, ranging from dinner entrees to themed cocktails to baked goods, all made without animal products.
